So, you're asking about the effect of consumables rather than stacking in inventory. To which I say, it depends. Most of the time different sources of resistances stack, for consuming one item multiple times, I am not sure. It stacked that way pre enhanced editions.

If you aren't sure, you can just save game, test it and reload. Even in the no-reload run, if it is just for testing and not for save-scumming for desired result or in order to repeat incoming battle, then I think that's fair, since it won't change anything important. It will just give you knowledge.

Resistance to cold potions do stack. My paladin with cold resistance of 20 gets 120 after consuming 2 resistance to cold potions. It seems that unless specifically mentioned, that they do stack.
Chants for instance do not stack and this is specifically mentioned!
