Resistance to cold potions do stack. My paladin with cold resistance of 20 gets 120 after consuming 2 resistance to cold potions. It seems that unless specifically mentioned, that they do stack. Chants for instance do not stack and this is specifically mentioned!

Some spells etc are not stackable so as to prevent you getting 100% resistance.
