Hehe, it's true, there are just SO MANY classes in this game. My advice would be not to hesitate to use respec if you feel your chosen class doesn't cut it for you. If you install the ToyBox mod, respec would be free and easy to access.
As for a non-caster lich, sure, it's very viable. First of all, EVERY class is viable not on Unfair (which is not recommended for a first playthrough anyway). Then, as a lich, you get amazing spells like Mage Armor, Haste, Vampiric Blade, Bone Shield, and Frightful Aspect from the spellbook, which greatly enhance your melee character. After that, you add lich perks, such as Unbreakable bones, Weapon of death, and Death rush. You can also get an undead companion for a bard song or extra buffs.
So yes, a death knight-type character is very much viable, and fun. You can even ride an undead mount if you'd so wish, later with levels.
As for which class to start, try going with the basics first. E.g. start with a Fighter class.
